Catering
We cooked for private events long before the trailer existed. Tell us what you're planning and we'll tell you what we can do.
Los Barbados started as a pop-up in 2021 and catering came with it. The food is the same as what we serve from the trailer — spice blends and sauces made by hand, sides and sweets cooked in-house, nothing bought in.
What we cook for events
Plates built around BBQ chicken, stew chicken, oxtail and pig tails, with rice and peas, macaroni pie, potato salad, tossed salad and plantain. Fish cakes by the tray. Sweets made the same day.
If you want something Bajan that isn't on the regular menu — cou-cou and flying fish, pudding and souse, conkies in season — ask. It's the cooking Mark grew up with, and event menus aren't limited to what fits in a trailer window.
How it works
- Call and tell us the date, the number of people and roughly what you want.
- We'll talk through a menu and give you a price.
- We confirm in writing before anything is booked.
The practical details
Catering starts at 25 people and $400.
Delivery, serving staff, utensils and chafing equipment can all be added. What they cost depends on where you are and how you want the food served, so we quote them with the menu rather than off a price list.
Nothing is booked until you've seen the price in writing.

Where we go
Serving Bloomfield, Hartford, West Hartford, Windsor and towns across Hartford County. If you're outside that and the date works, ask anyway — we traded the Caribbean Rum and Food Festival at New Britain Stadium in 2024, so we do travel for the right event.
Booking the trailer itself
For larger events we can bring the trailer and serve on site, which works better than trays for anything where people eat across a few hours.
