Catering
We cooked for private events long before the trailer existed. Tell us what you're planning and we'll tell you what we can do.
Los Barbados started as a pop-up in 2021 and catering came with it. The food is the same as what we serve from the trailer — spice blends and sauces made by hand, sides and sweets cooked in-house, nothing bought in.
What we cook for events
Plates built around BBQ chicken, stew chicken, oxtail and pig tails, with rice and peas, macaroni pie, potato salad, tossed salad and plantain. Fish cakes by the tray. Sweets made the same day.
If you want something Bajan that isn't on the regular menu — cou-cou and flying fish, pudding and souse, conkies in season — ask. It's the cooking Mark grew up with, and event menus aren't limited to what fits in a trailer window.
How it works
Tell us the date, the headcount and what you're after — call, or fill out our catering request form.

- Nothing's booked until you've confirmed it in writing.
Pickup, delivery or full service
- Pickup — swing by and take it with you.
- Delivery — we bring the food to you.
- Full service — we bring staff and serve it on site.
- Plates, napkins and serving utensils — available for an added fee if you need them.
The practical details
Catering starts at 25 people and $500.
Nothing is booked until you've seen the price in writing.
Where we go
If you're outside that and the date works, ask anyway — we traded the Caribbean Rum and Food Festival at New Britain Stadium in 2024, so we do travel for the right event.
Hire the trailer
For larger events, we bring the trailer itself and serve from it on site — minimum 100 meals.
The trailer is self-contained, or can run off a single 50-amp outlet if one's available where it's parked.
The trailer alone is 18 feet by 8.5 feet. Towed in behind the truck it's about 40 feet overall; once it's parked and leveled, the truck disconnects and leaves, so all we need on-site is a straight approach to back it in.
